And indeed I abandoned Joe Talbot and my monthly guest chef appearances on BBC Southern Counties' Cook on the Books radio show in late 2016. My last semester and finals were looming and absolutely everything had to take a back seat to my studies. So it was hugely exciting to be back last Friday. Joe and I caught up on the past two years and talked about how a nutrient-dense way of eating can benefit long-term health. I had prepared three different dishes for him to taste, all based on pulses which have an impressive nutritional profile: they are packed with fibre, protein, vitamins and minerals and can lower cholesterol as well as balance blood sugar, let alone feed the notorious microbiome - and that is just a start!
